Ingredients for the dough

170 g of honey

200 g brown sugar

60 g butter

1 egg

300 g flour

5 g baking powder

1/2 teaspoon baking soda

pinch of salt

100 g ground almonds

1 teaspoon lemon zest
-
2 teaspoons ground cinnamon
-
1/2 teaspoon ground ginger

1/4 teaspoon nutmeg
-
1/4 teaspoon black allspice (or ground herb pepper)
Ingredients for the topping

120 g powdered sugar

30 ml of lemon juice
Preparation:

Melt honey with brown sugar over low heat, add butter and, stirring, let it melt completely.

Set the mixture aside to cool to room temperature, then stir in the egg beaten earlier with a whisk.

Combine all dry ingredients: flour, baking powder, baking soda, ground almonds and spices.

Add lemon zest and mix thoroughly until the mixture is smooth.

Combine the dry ingredients with the honey mixture, knead the dough, cover with plastic wrap and set aside at room temperature for at least 1 hour.

Divide the dough into two parts, roll out one of them on parchment paper (or silicone mat) to a thickness of about 1-1.5 cm. Cut out gingerbread cookies with a mold, and remove the excess dough.

Gently transfer the gingerbread cookies to baking paper, leaving gaps, as they will rise during baking.

Bake in an oven preheated to 180°C for about 12 minutes.

Combine the dough remaining after punching with the other part of the dough, roll out again and punch out more gingerbread cookies – repeat until all the dough is used.

After baking, transfer the gingerbread cookies to a wire rack to cool (bake in several batches).

For the glaze, combine lemon juice and powdered sugar and spread it on the still-warm gingerbread cookies
